I have found that if I'm going to stay on track I need to have things on hand that are EASY and QUICK!! The best trick in my tool box for quick and easy is frozen and diced chicken -that's already cooked of course! In comparison to the big name brands, I prefer Kroger's brand. It seems a little less fake to me (always a good thing). I have created a lot of dishes with it but today's selection is Chicken Alfredo. It's so easy!! I usually make it in the morning so I can take it to work for a yummy lunch. I have co-workers that often order-in Chicken Alfredo, but the kind that comes with pasta and bread. As any low carb-ers know, this is a nope! :) My Chicken Alfredo is definitely a yup! And I don't have to salivate over their dishes ever again!!
What you'll need from the store:
Broccoli -- I like to get the packages of fresh broccoli and cauliflower mix -- but you can use
frozen, or fresh from a big bunch.
Alfredo sauce -- I get Buitoni. It's in the refridgerated section usually on the pasta aisle.
Chicken -- 3oz of the frozen diced chicken mentioned before.
How I make it for a packed lunch
Pour chicken in a to-go bowl.
Pour 1/4 cup of alfredo over chicken.
Pull apart 3-4 broccoli spears in to small pieces.
Season with a little salt, a little more pepper, and 1 tsp. grated parmesan.

When I'm ready to eat I microwave it for maybe 2 minutes (depending on microwave). I think it's delish!
