First of all, let me introduce you to Ole Xtreme Wellness High Fiber Low Carb Tortilla Wraps. THEY ARE A GODSEND!! My best friends, these tortillas are! ;) They're 5 carbs!! 5 CARBS! Love them!! I find them at Kroger but I hear they're at Publix and Target as well. This is a fun dish & yum!
The Enchiladas:
- McCormick Enchilada mix
- 1 1/2 cup water
- 10oz can of Rotel diced tomatoes with chili peppers blended into a sauce-- Package calls for 8oz can of tomato sauce, but I didn't have any in the cabinet so I improvised. :)
- 2 Ole Xtreme Wellness High Fiber Low Carb Tortilla Wraps (I find them a Kroger)
- 1 cup 2% Sharp Cheddar cheese
- 1lb extra lean beef (Laura's Lean Beef)
Follow the directions on McCormick Enchilada packaging, but to cut the carbs use only two tortillas. Place one tortilla dipped in enchilada sauce in a glass baking dish wide enough for the tortilla to lay flat. Pour beef mixed with 1/2 cup of enchilada sauce onto the tortilla, spreading it across the entire tortilla. Top with second tortilla dipped in sauce. Pour the remaining sauce over the enchillada, then top with cheese. Cook at 350 for 15 minutes of until the cheese is melty and the sauce is bubbly. Cut the Enchilada into four pieces, like a pizza; I even use a pizza cutter to do the job. Then yum it up!
