Not Your Mama's Enchilada

 
     First of all, let me introduce you to Ole Xtreme Wellness High Fiber Low Carb Tortilla Wraps. THEY ARE A GODSEND!! My best friends, these tortillas are! ;) They're 5 carbs!! 5 CARBS! Love them!! I find them at Kroger but I hear they're at Publix and Target as well.  This is a fun dish & yum!



The Enchiladas:
  • McCormick Enchilada mix

  • 1 1/2 cup water

  • 10oz can of Rotel diced tomatoes with chili peppers blended into a sauce-- Package calls for 8oz can of tomato sauce, but I didn't have any in the cabinet so I improvised. :)

  •  2 Ole Xtreme Wellness High Fiber Low Carb Tortilla Wraps (I find them a Kroger)

  • 1 cup 2% Sharp Cheddar cheese

  • 1lb extra lean beef (Laura's Lean Beef)


Follow the  directions on McCormick Enchilada packaging, but to cut the carbs use only two tortillas. Place one tortilla dipped in enchilada sauce in a glass baking dish wide enough for the tortilla to lay flat. Pour beef mixed with 1/2 cup of enchilada sauce onto the tortilla, spreading it across the entire tortilla. Top with second tortilla dipped in sauce. Pour the remaining sauce over the enchillada, then top with cheese. Cook at 350 for 15 minutes of until the cheese is melty and the sauce is bubbly. Cut the Enchilada into four pieces, like a pizza; I even use a pizza cutter to do the job. Then yum it up!

Candy that Wiggles

I was walking around Kroger the other day and came upon a refrigerated package of little jello bites (they're actually Gel Bites made by Kroger - but to me if it looks like jello, well, that's what I call it).  On impulse, I decided to grab a bag - strawberry in case you were curious. :)  As soon as I got to the car I opened them right up. Usually, after grocery shopping I'd start digging for something more along the lines  of - oh I don't know, cookies,  candy, or chips.  Jello bites are a much better grab for the car ride home!!  I'm pretty excited about my little find.  Sure, I could make something like that on my own -  BUT just knowing that there is something at the grocery store I can grab for a quick fix is a bit of a relief. I mean it's sorta candy that wiggles. That's fun! ;)

I was even thinking these little Gel Bites could help me out of a bind (or binge ;) ) in the future. Let's say I'm with a group of friends and the crowd winds ups at one of my old favorites like Sweet CeCe's, if I'm feeling a little low on the will power,  I now know I can make a quick run for some jello bites and not feel left out. I mean that may never happen, but I like to have little game plans in my head in case such a situation ever arises.

Who Needs Pasta Chicken Alfredo

I have found that if I'm going to stay on track I need to have things on hand that are EASY and QUICK!! The best trick in my tool box for quick and easy is frozen and diced chicken -that's already cooked of course! In comparison to the big name brands, I prefer Kroger's brand. It seems a little less fake to me (always a good thing). I have created a lot of dishes with it but today's selection is Chicken Alfredo. It's so easy!! I usually make it in the morning so I can take it to work for a yummy lunch. I have co-workers that often order-in Chicken Alfredo, but the kind that comes with pasta and bread. As any low carb-ers know, this is a nope! :) My Chicken Alfredo is definitely a yup! And I don't have to salivate over their dishes ever again!!

What you'll need from the store:

Broccoli -- I like to get the packages of fresh broccoli and cauliflower mix -- but you can use
frozen, or fresh from a big bunch.

Alfredo sauce -- I get Buitoni. It's in the refridgerated section usually on the pasta aisle.

Chicken -- 3oz of the frozen diced chicken mentioned before.

How I make it for a packed lunch 

Pour chicken in a to-go bowl.

Pour 1/4 cup of alfredo over chicken.

Pull apart 3-4 broccoli spears in to small pieces.

Season with a little salt, a little more pepper, and 1 tsp. grated parmesan.

When I'm ready to eat I microwave it for maybe 2 minutes (depending on microwave). I think it's delish!

Greek-ish Beef

I'm starting this low carb eating blog to help myself succeed. I have these little flashes of genius (or what I think is genius, anyway ;) ) that inspire low carb dishes. But it's mostly only when I'm all inspired to eat well. The thing is, when I'm struggling to stay on this horse I never remember how good the food can be. Or my mind just blanks out on me. I wouldn't consider myself a great cook by any means but I usually like what turns out -- and I always get compliments on how good it smells at work when I take the left overs. In case someone else is reading this other than my mom ;) I'll be up front, some of the nutritional facts may be off but I do my best to calculate it accurately with the nutrition info that comes on packaging or found online. Maybe I can inspire someone else who is low carb'in it.

First dish is Greek-ish Beef









1/2 cup reduced fat feta - 120 cal. 2 carbs 7 fat 12 protein

1lb extra lean beef - 560 cal o carbs 18 fat 96 protein

1 green bell pepper (2 cups) 33 cal 7.6 carbs 0 fat 1.4 protein

1 tsp extra virgin olive oil 40 cal 0 carbs 4.7 fat 0 protein

2 tsp minced garlic 10 cal 2 carbs 0 fat 0 protein

2 tsp dried chopped onion no info at the moment

fresh ground salt and pepper ( I uses a good bit of pepper)


total dish: 763 cal 11.6 carbs 29.7 fat 109.4 protein

serving: 190 cal 2.9 carbs 7.43 fat 27.35 protein




Cook the pepper with the olive oil, 1 tsp garlic, dried onion, salt pepper, oregano

Cook and drain the beef -- add salt, pepper, oregano, dried onion while cooking

combine the two then mix in feta. -- you could do feta on each dish if you'd rather.

I've made this with a whole chopped onion as well, and it's good -- but take note that it will add more carbs if you decide to add it to your dish. :) :) :)
